I’ve made some slight revisions, but please reference her site if you’d like another version of this delicious dish.
Bacon, Hashies and Eggs
Serves 2
Ingredients:
4 slices bacon, chopped
4 small potatoes
2 eggs
1/4 cup shredded cheddar cheese
Onion powder
2 tablespoons butter, separated
Directions:
Preheat pan to medium-high and start to render the chopped bacon. This will take roughly 5-7 minutes.
While bacon is rendering, peel potatoes and cut up into cubes. Once bacon is cooked, add potatoes to the pan. Sprinkle potatoes with onion powder and top with butter, one tablespoon on each side of the pan. Cover. Reduce heat to medium.
Sauté for approximately 10 minutes, mixing the potatoes and bacon with a spatula from time to time.
Create two hallow openings in the mixture.
Crack eggs into openings and let cook for 5-7 minutes. In my version, I made one regular egg and one egg white, since I do not eat egg yolks.

Sprinkle cheese over top and cover with lid until cheese is melted.

Use a spatula and divide it onto two plates.
